Sticky….rice
I`m not skilled in cooking. Not at all. I am as good as Miss Ana and I don`t even have the privilege of such a chic and gifted master like Miss Mazilique.
But I miss Thailand and I fancy something sweet and good, good, good. Therefore, I decide to go into the kitchen, take courage and make my debut with a ”mango sticky rice”, a kind of rice and milk in Thai variant. Could it be so complicated? It seems incredibly easy to cook….Shall we try?
We need:
- 1 cup of “sticky” rice
- 1 can of coconut milk, sugar free, well shaken
- 4-5 spoonfuls of brown sugar or palm tree sugar
- 1/4 dessertspoonful of salt
- 1spoonful of sesame, a bit fried
-2 big, ripe mangoes, cut into pieces
What are we doing and how?
- We wash the rice in cold water, several times and let it until it softens-still in cold water-overnight (well, I have to wait until tomorrow to enjoy something sweet which I feel like eating today.)
- We strain the rice which has been softened overnight in a sieve that we put over a large pot, with hot water (the sieve mustn`t touch the water), and we let the rice steam, covered with a tea towel and a lid, for 30-40 minutes (until it softens)
- We forget about the rice (but we remember to check the level of water inside the pot,between whiles, to be sure that the rice won`t boil in a dry pot) and move on to another pot.
- We boil 2/3 out of the coconut milk with 2 spoonfuls of sugar (oh,doing maths ,again? oh,dear!) and a bit of salt, mixing until sugar melts. (it`s simple, isn`t it?)
- We put the boiled rice in a bowl, we pour the sweetened coconut milk and let it covered, until the rice gets soaked in the sauce: and we take… another pot.
- We simmer the rest of the coconut milk (as if there was a question of high speed, so far..) 1/3 out of the coconut milk with the rest of 3spoonfuls of sugar, stirring for 1 minute. The sauce is put in a small bowl and is chilled until it thickens. (waiting again?)
- Finally, when tasting time comes, we put some sticky rice, a quarter of a cup, on a plate and add the sauce, with a handful of sesame seeds and mango slices.
- Is it simple? It might be! But I`ll go out and eat in town!
