The best bites in Seville
There are the amuse-bouches, the mezzes, the pesticos, appetizers in the Spanish variant. They stole everyone`s heart with their taste, cuteness, delight and are a successful proof that the little, yet nourishing, culinary feats can successfully replace even lunches and dinners. They are worth complete culinary reviews, they have lots of contests and battles between chefs and it would be no exaggeration to devote a marathon to them : tapas, amigos.

Top tapas bars in Seville:
• The Burladero in Gran Melía Colón, is undoubtedly my fav! From the smart and classic setup, with contemporary touches, to the fabulous tapas, of course, everything here is wow. The foie gras terrine with a fine sauce of ox tail, shrimp salad with potatoes, grilled squids with pepper jam and salmorejo with quail egg and Iberian jamon are raised to the rank of art and vanguard.
• La Brunilda is deep in the center and serves very creative and extremely tasty tapas, but the disadvantage here is that you can`t book in advance and the place is always, how else but …crowded( even the tables are a bit crammed.) However, it must be definitely checked, at least once, for some natural chicken with polenta and mushrooms, grilled squid with bread crumbs and egg and herring caviar, octopus and vegetables and mayo sauce, risotto with idiazabal cheese and mushrooms, clams with cauliflower cream and white sausage…Shall I stop here?
• ENA, owned by the chef Carles Abellán from the Alfonso XIII Hotel, is as impressive as the hotel itself. The menu(I tried some squids with feta cheese and salmorejo ) is really surprising, and the chef, like any master of flavors, overleaps his shoulders…
• Enrique Becerra is obviously on the must list as far as tapas of Seville are concerned, it is a traditional spot where the asparagus pudding with shrimps, the gratin goat`s cheese with caramelized onion and the shrimps and squids roasted on the spit highly impress anyone.
• Eslava is equally tiny and private, while the tapas are equally savory and extremely original: a vegetable strudel, mi-cuit foie gras or grilled leek are some of the selections from the goodies on the list .
• La Azotea is famous and considered a bar with “author”dishes. I was fascinated by the seafood tapas (clams in artichoke sauce, squids), but the menu abounds in gastronomical crazes like egg-plant with cheese and onion jam.
• Although it is considered the place where tapas were invented in the town and moreover, the oldest one, I have to admit that I wasn`t so stunned by El Rinconcillo as I expected. The décor is nice, but the tapas are rather simple and classic, they have nothing special. Tortilla and jamon serrano are to be tried!
