It is said that the most precious treasure in Champagne is…to your stupefaction(!)…the champagne, but there is also another hidden treasure in the area, something ”oh-la-la”: Les Crayères Domaine. 

It sounds rather pompous, doesn’t it? Well, this hotel-castle was formerly the house of the renowned Polignac family, it was entirely restored by the archirect, Pierre-Yves Rochon, in the same classical French style of the former house and with the same smart, refined and sophisticated air of the previous century. The investment is impressive not only by its value but also by the way the hotel came into being, thus describing so well the essence of the spot.

• The hotel belongs to the Relais&Châteaux chain, which includes a few hundreds of restaurants and hotels, unique in the world
• The restaurant Le Parc of the Chef with Michelin stars, Philippe Mille, is a fabulously gourmet one, where the dishes are real stars, carefully and minutely prepared-veal with homemade pasta, sturgeon caviar, foie gras terrine with peach and almonds, ravioli filled with shell-fish and vegetables, champagne mousse ….everything you can imagine and more…
  
  

• In Le Jardin brasserie you have an ambiance with industrial touches, but it preserves the general outline and you can enjoy a fresh snack or drink a glass of wine or an exceptional champagne in this place
• I liked the gardens very much, if you go to La Rotonde Bar, in the evening, you can also see them, all around, and you must listen to some jazz, by all means, while savoring a cup of champagne (vintage)
