Brine reloaded (Hvar method)
Simple and easy like fish in the water
Natural like salt in the food (in brine, too)
As good as a summer holiday in Croatia.
Brine à la Hvar!
Ingredients:
• 700 g white fish
• 3 cloves of finely chopped garlic
• olive oil
• one laurel leaf
• 400 ml white wine
• 400 g sliced potatoes
• salt, pepper, and chopped parsley
First, potatoes are sliced, then put in a separate pot, brought to boil, after which the gas is turned off and and they are left there.
Afterwards, the oil is heated, garlic is added, to be followed by the fish, cut into 3-6 cm long pieces.
Careful! NOT TO BE STIRRED, by no means, just shake the pot!
When fish starts to get sticky, wine, salt, pepper, the laurel leaf and the potatoes are put.
They are shaken well and water is then pouredto cover them.
It is cooked until the potato softens, for about 20 minutes, then parsley is added and itdefinitely needs to be eaten with a spoon!
